Radish Salad Recipe
As the weather gets warmer, it's important to eat light and refreshing foods to help keep the body rejuvenated and well-nourished. Fresh vegetable dishes are great for meeting those needs.
Ingredients for Salad
2 bunches of fresh radishes, rinsed, dried, and finely sliced
4 cups mixed salad greens, rinsed and gently dried
2 tablespoons fresh parsley, rinsed, dried, and chopped
Ingredients for Vinaigrette
1 or 2 medium lemons, rinsed, seeds removed, and freshly squeezed
1/4 cup fresh lemon juice (purchased lemon juice is optional)
1/4 cup extra-virgin olive oil
2 teaspoons honey
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
In a large bowl, whisk together the lemon juice, olive oil, honey, salt, and black pepper until all ingredients are thoroughly combined.
Add the rinsed, dried (gently remove excess water), and prepared radishes and mixed salad greens to the bowl and toss to coat evenly with the vinaigrette.
Cover and refrigerate the salad, if preferred, for 10 minutes to allow the flavors to blend.
Garnish with fresh parsley, if desired, and serve immediately while the salad is fresh.
